Kale is a great versatile green vegetable that grows well in the garden.  It can be picked fresh and made into a delicious simple salad with toasted seeds and a light dressing to enhance the flavour.  Eating fresh foods from the garden is of course a great way to practice sustainability.  Annaporna has devised this delicious recipe from kale growing in the garden here at Anahata.

Warm Kale Salad in three easy steps…

Freshly picked kale (you can use spinach or any other greens growing in your garden!)

Sesame seeds

Sunflower seeds

Olive oil

Lemon juice

Tamari

Salt and Pepper to taste

Toast seeds in a frying pan with a little tamari until golden brown,

Steam kale until just wilted,

Combine seeds, kale, olive oil, a little lemon juice, a dash of tamari, a pinch of salt and pepper.

Simple…delicious…and full of goodness!
