FRUITY LOVE LOAF
Sweets make us smile and bhakti yogis love to treat their friends and guests to a smile anytime with a loaf made with love. In Ayurveda, the sweet taste at the beginning of the meal helps to get our digestive fire excited. Sweets have their place too, as with everything, in moderation.
This is a delicious loaf which is packed with the natural sugars of fruit and requires little or no added refined sugar. For a gluten free option, simply substitute the flour with a suitable alternative.
Put the following ingredients into a saucepan, bring to the boil and then let sit for a while:
- At least 3 cups of dried fruit (sultanas, dates, raisins, apricots etc.)
- 2 cups water
- ¼ cup sugar (or add more fruit)
- 2 Tbsp cinnamon
- 75 grams butter?
- 2 ½ cups flour (may need a little more)
- 2 tsp baking soda
Add to the mixture 1 grated apple and 1 mashed banana.
Put the mixture into a greased loaf tin and bake for 1 hour at 180 degrees C. Let cool in the tin for 5 minutes before turning out.
Once the loaf is cool it is easier to slice.
Enjoy with butter and a nice hot drink!
