So that everyone can get a taste of this delicious food, we are sharing a recipe from Nanditha’s personal collection that you can try at home. Simple to make, with a few spices added, it will taste like a professional Indian dish…
SABJI - Mixed vegetables with spices.
This recipe serves four. Although this recipe uses winter veggies, you can substitute with veggies of your choice.
Egg Plant- 1 small
Sprouts- a handful
Greens- a cup full
Ginger- one small piece
Garlic- a few cloves
Salt- a pinch or to taste
Spices: whole black pepper, cumin, cardamom, cloves, cinnamon powder or one stick, mustard seeds, a few dried red chillies (optional)
Oil or ghee for frying the spices
Heat oil or ghee in a pan, put aside the ground spices- black pepper, cumin, cardamom, cloves together and throw the mustard seeds (a teaspoon) in the heated oil or ghee. Add chillies after the mustard pops.
Add chopped onion, ginger and garlic, sauté on a medium heat for one minute, and then add chopped tomato and the ground spices. Add chopped veggies, sprouts and stir well with the spices. Then add salt. Sprinkle water over it and keep covered, occasionally stirring until fully cooked.
Serve with lentil soup and rice :)
